Our Eola Amity Riesling is made to give the perception of a dry style by balancing the residual sugar level with the high acid concentration the grapes provided. All together this wine presents complexity and a refreshing crispness. These grapes were not de-stemmed but pressed as whole clusters and given a slow, cool stainless steel tank fermentation lasting about 3-4 weeks. We selected an aromatic yeast to lift the bright characters of this varietal. The grapes making up this wine were sourced from an outside site located in the Eola-Amity AVA. This site has the highest density of Riesling vine plantings in the state and is farmed with the highest quality production in mind. It is a well-established site and we are pleased to be able to work with it to create an intriguing, layered Riesling in the 2015 vintage.
