We are always looking to ‘evolve’, especially within the Evolution branded wines. Here’s where Evolution in Progress comes in. This program is intended to give our winemaking team the chance to play with a wider variety of wines and share them with Evolution fans. All wines in this program are fully crafted to the winemaking team’s liking and are only made in small batches.
Carbonic maceration is a technique made famous by the French Beaujolais Nouveau, so we decided to try it with some of our Pinot Noir to bring out a new aromas and flavors from the grapes. Blended with some of our traditional Pinot Noir, this wine combines the fun and fruitiness of the Nouveau with the tannins and structure of Pinot!
