Wine

We are always looking to ‘evolve’ especially within the Evolution branded wines. Here’s where Evolution in Progress comes in. This program is intended to give our winemaking team the chance to play with a wider variety of wines and share them with Evolution fans. All wines in this program are fully crafted to thewinemaking team’s liking and are only made in small batches. Sauvignon Blanc is one of those wines that just remind you of sunshine and summer days. This is the third time working with the grape and we fall in love a little more every time!

Winemaking

The grapes to make this wine were lovingly hand picked in the beautiful Willamette Valley. They saw nothing but the finest stainless steel tanks for their fermentation and aging, where they rested briefly for 4 months. This wine is young, bright, and ready to take on the world!

Vintage

The Willamette Valley started off the growing season with a cool, wet spring. Summer came through with ease and but insane wildfires brought harvest to a halt! Thankfully a massive rainstorm saved the day and we wrapped up the 2020 season with optimism!

Notes

On the nose, the Evolution Sauvignon Blanc expresses bright lime and grapefruit, as well as fresh coconut and honeysuckle.On the palate, the citrus and coconut are joined by under ripe pineapple.

Pairings

This wine goes great with fresh summer salads, shrimp scampi, or you can find your gourmet side and serve it with a creamy chevre.
