Thanksgiving Dinner Menu

  • Herbed Champoeg Farms Turkey: local pasture-raised turkey breast and dark meat, brined and cooked sous vide with butter, sage and thyme. Seared and portioned in our kitchen, ready to slice and serve in yours.
  • Cornbread & Focaccia Dressing with Turkey Gravy: dark meat turkey, roasted and baked into a classic herbed dressing, with apple, carrot and onion. Served with housemade gravy created from our rich Thanksgiving turkey stock.
  • Cranberry Compote: fresh Oregon cranberries cooked with plump black currants and a touch of citrus.
  • Sweet Potato Puree: sweet potatoes roasted and pureed with maple and brown butter with a hint of cardamom and clove.
  • Fall Grain Salad: farro tossed with roasted butternut squash, dried Oregon cherries, red onion and herbs. Dressed with a sweet sherry vinaigrette.
  • Brown Butter Roasted Cauliflower: whole heads of cauliflower roasted and basted in sage brown butter and portioned into florets.
  • Pumpkin Pie with Orange Scented Whip: individual pumpkin pies served with orange scented whipped cream.
