This week we offer a delicious potato and leek chowder! Filled with root vegetables, bacon, and kale this is one of my favorite soups that never disappoints. The creamy, earthy sweetness of the potato plays so nicely with the complexity, depth, and structure of the leek. Complemented by the smoky bacon, this is a great start to your evening!
We continue to celebrate the bounty of the valley with local delicata squash and the season’s final showing of lobster mushrooms, sourced from nearby farms and foragers by our good friends at Cascade Organic. A favorite in our kitchen, we split and de-seed the beautiful squash, and gently roast them in our kitchen to prepare them for yours. Ready to fill at home with a blend of wild rice, Brussels sprouts, foraged lobster mushroom and Briar Rose Fromage Blanc. Enjoy the contrast of the creamy fromage blanc, the sweet squash and the nutty wild rice. Pairs beautifully with our 2019 Estate Müller Thurgau.
For a sweet treat at the end of your meal we’ve put together a cranberry and buttermilk panna cotta. Sweet, savory and a little bit tart, this creamy dessert is nestled on top of a chocolate ganache made with single origin 100% Dominican dark chocolate. Yum!
As always, leave the breadmaking to us and add on a side of housemade focaccia with your meal!
